My name is Lydia Palma and I am a co-owner of Pirates Bone Burgers. I will share a little bit of where we have been so you may better understand why I'm here presenting to you today. In 2014 my now business partner, Saeed Consuegra, started Pirates Bone Coffee Shop in the Brookside neighborhood. And in 2017 Saeed and I both switched to a plant-based diet for three different reasons, our health, the environment, and the animals. It wasn't long before he decided to align his personal and professional life by switching the coffee shop to 100% plant-based at the risk of losing customers and having to close the business. Luckily were not the only ones who were looking for plant-based options, leading the coffee shop to turn into a test kitchen, which is where the famous black bean and beet burgers were created. Quickly we outgrew the tiny shop and moved to our current location on Main Street in the crossroads. I believe to be a sustainable business we must be aware and continually learn and grow. Being new to business I chose to register for this gross venture course in order to better serve my business by gaining a better understanding of business. Pirates Bone Burgers is a modern plant-based burger diner offering a safe space with affordable, eco-friendly, healthy, and compassionate cuisine to those who live and work in the Kansas City crossroads. We do this to feed more plants to more people. We do it by being where the people are, keeping costs low to keep prices affordable. Our vision is to support the power of choice and change. A few of our values are inclusivity, accessibility, diversity, and honesty. Our style of service is casual, dine-in to go and delivery. Since 2008 there has been more than 11% growth in plant-based items being added to menus in restaurants of all kinds. We are an LLC with three members, two active and one silent. So it is head chef and head of social media. I am a head of the financials A&HR. We both work together to run the day-to-day operations and help manage our crew of nine. Our brand, story, concept, products, and service are definitely our strengths which is why I believe the press has been seeking us and sharing our information in print and online.
