Steel City Pops

I never thought that I'd be making popsicles Jim, the owner comes to me and wants a new flavor or he has had a dessert that he loves that he wants to turn into a pop. I find some inspiration. I just try to come up with a flavor recipe. It usually doesn'turn out the first time, so it takes a couple of times to get it right. I am Katie Moon. I work at Steel City Pops. I am the director of culinary development. I wear many hats, so I make the new flavors that come out. I also bake all the cookies that go in the cookie pops. They're all gluten-free, so graham crackers, brownies, dark chocolate cookies, huge range of different flavors of cookies. Today we are making the brownies that go in the chocolate brownie pop. That is one that we haven't had in a while. It's actually been off the menu for a really long time, but we brought it back for the spring menu and it's totally blown up. We listen to our customers if they want something, then we definitely try to bring it back. Cookie has to be a specific texture. Much It's a delicate balance, figuring out the right texture to go in the right pop. We have stores all over Alabama, so there's one in Huntsville. There's actually three in Birmingham and then we have one in Auburn and Tuscaloosa. Currently, we have several in Texas. We're expanding, but I love telling people it started in Birmingham because nobody knows it, especially people in Texas don't know that it started in Alabama and has just kind of blown up. It's different every day. It's never the same, which is super fun for me. I mean, I love what I do.
