We put the green coffee in there, it blows over to a holding hopper. This holding hopper doubles as a scale. When the roasting reaches proper tip, we go ahead and we drop the beans inside into the dr It's a 12 minute roasting process. Part of that 12 minutes is just cooking the moisture out of the coffee beans. At the end of the roasting process, the cooling is the most important thing.
