I'm sitting with one of the most fabulous business managers and just amazing people in general. I'm Sarah Schaeferk. I'm the GM for Cafe Sincourt 3. That's awesome. I want to see her all the time. Alright, so I guess first question. I'm just going to get it started. Wow, it's kind of a long story. The original Cafe Solstice was actually in college on Broadway. We started in 1994. It was in front of the Thai restaurant which is now called Dai Tai. It used to be called King's Dole. That little noop there by the bus stop. That's where we had our carts. Yeah, and then in 2000 we opened a freaking mortar in New York this week. And then in June of 2013 we opened this place. So you went from cart to smaller place to huge books. That's a huge transition. You can open it to that. The U-Dissert Shop, and it's on the fence, is pretty big too. It's also 3,000 square feet, but it doesn't have a nice. . . 3,000 square feet. I'm sure that's a huge. . . Okay, I was noticing the beers and stuff and liquor. Do We have two happy hours every day. One from 3 to 6. And one from 10 to close. 3 to 6 also has happy hour food. And dollar off year one. And then 10 to close is just dollar off year one. Yeah, and yes we won't buy it. It's a really fun one. Oh no, we serve all day. Really? Wine all day, so you can eat drunk all day. Wine all day, people. Beer all day. So, what's your guys' signature dish or signature drink? I think You feel more religious, the thing This is something really perfected. Our signature is just damn good coffee. Make it good. There's no need for thrill. It's good for itself. You were Well Yeah I do, it's great. It's fantastic. When the espresso's on, I get to try it. Yes. Okay, what are your guys' hours long? This shop is Monday through Friday, 6am to midnight, and Saturday and Sunday, 6. 30 to midnight. And then do you guys have We don't really have a functioning website at this point. We're on Instagram, we're on Facebook, and our menus are posted on both of those. Okay, It'super dope. You might spot me here one day, probably not. You probably won't. I told you, I told you.
