Moxie Baking Co. is a local eatery inspired by old world food craftsmanship. We specialize in rustic, simple and delicious baked goods served in an open, inviting environment designed to welcome the whole family. Our breads are made with non-GMO (sometimes organic, and sometimes even biodynamic) local flours and grains that undergo a long and slow fermentation process. This fermentation process breaks down many of the proteins and compounds in the grain, and helps create more healthful bread that’s easier to digest (and has even proven to be tolerated by some people with sensitivity to highly processed white flour breads). Most of the breads made at Moxie Baking Co. also include a large percentage of nutrient-rich whole grains and seeds, contrasting with the empty calories often found in commercial white flour bread. Our approach to wellness through baking is based in the common sense philosophy of eating fresh, local and unprocessed foods as close to their natural state as possible.
And he had a magic about him and he was a very charismatic person, very kind, very giving, really amazing father and just in general a very loving and very fun person. He loved what he did. He really enjoyed baking. He started when he was young and luckily found his arena that he really Bread was really where his heart was. Andy was super excited to open his own place. He wanted to create a place that was welcoming, that was warm, that had amazing music and so Moxie did become more of a community hub as well as being a bakery and I think that was really due to the energy that Andy poured into it. He was encouraging and empowering and the culture that Moxie has is because of him. As Andy started to learn more about sustainable farming and Adam Grain it really got in his heart and he wanted to teach other people about it and share his knowledge. He co-founded the Colorado Grain Chain which is a way to teach people about heirloom and to be able to partner up different people in the industry so to encourage farmers to market for this. Well then it'speaking to bakers and restaurateurs about the benefits to get them together and with millers. Andy would feel about receiving the honor of this award. I think he would be baffled. He was the type of person to feel The legacy that Andy left behind really is for me it's kindness, it's treating others with kindness. He did that just as naturally as breathing. The legacy at Moxie is create amazing bread and great coffee and a place where people want to come and be and a place where employees feel happy to work and that's what we try to continue his legacy every day.
