Yeah, so we're in Midtown, kind of on the edge of what would be called Westport. Our corner now is starting to really grow. So there's us here roasting, and then our cafe down three doors down, and then there's a night barber shop, there'so our approach is So We'll be constantly moving through to new things and appreciating the seasonality of coffee. Yeah, Our roasting philosophy is pretty Kind of, I always think about it in the sense that as a musician, you practice and you learn skills or techniques and stuff We want to know what's going on in roasting, as far as thermodynamics and chemistry and all that stuff, but none of that matters if the cup doesn't date to it, right? So it's really more about having that so you can apply it and get something freaking beautiful out of the roaster. So in the dr That's a challenge for us, from when we opened our tasting room there, we didn't offer any sweetener or So like that's a big challenge for us to like gently bring people along and say like, okay, maybe you haven't had black coffee before, but like let us buy you a cup and show you that like it can be more than just like soot and So like this is the type of coffee that we would serve them to kind of show them that like you can, this coffee can taste like peanut butter and jelly in a cup, I mean I think So I mean like you know this place is not shiny polished in any way like it's just us being who we are or doing our best to be who we are, but like trying to excel you know with coffee as the medi So that's how I feel
