Noisette Pastry Kitchen is located in downtown Eugene. It seeks to incorporate the rich bounty of product found in the Willamette Valley. It's committed to the fundamentals of the craft; the seasonal, the technical, and the whimsical.
My name is Toby Sovac. I'm 53 years old and my husband and I opened Noisette pastry kitchen a year and a half ago. We opened up a cafe that is mostly centered on pastry, bread. Our initial concept was just to make kind of And so all the food is prepared throughout the day and if there's no menu, it just makes a lot of the same things day after day. But because of their popularity, we try to do, I guess, a wide variety of food. The baguettes get a lot of attention and the breakfast pastries, definitely. People comment on the Pien-au-Chopperat and the BASDAC, which they've never had before here. But we came up with the name because I wanted to have a name that was French but that people could pronounce. But it's not really French, it's just We wanted to also pay homage to the ingredients that we use and what is grown locally in this area, in the Willamette Valley. And one of those things that I use a lot are hazelnuts. So that's how we came up with the name, it's a great feeling that we've created something that we're proud of.
