Hey, I'm Tanya Cawthon, I'm the owner of Belmont Butchery, and we're going on our 19th year in business here in Richmond, Virginia. Yeah, the thing to look for in a good butcher shop is basically people and knowledge. Like, they love what they're doing and they like to communicate that, So, what our focus has been high quality meats, focusing on the no added hormones or antibiotics, h Probably about 60% of what we do is from local farms, and we do supplement with not local, so we can have the cuts that people want, as well as balancing the ethos that people are looking for. And what's very unique about us is we cut from a lot of carcasses, we make our own sausages, bacon, ham, pate, rietz, confis. So we have a very European approach to how we do it. We're not just cutting steaks.
