Chentepole, the 100-layer lasagna, is a mix of thin egg yolk pasta sheets together with a duck cell of chanterelle mushrooms and ricotta, with a Parmesan fondue and a grating of fresh Parmesan as well. It's about 25 plus layers of pasta and then each ingredient above that. Together with my business partners we have a small farm that we grow and raise our animals on down in Malino. We've been working over the past few years to kind of cook to what we grow. It's kind of an inspiration of a couple things. The egg yolk noodle pasta is pretty special. We raise a few birds on the farm and highlight our eggs in that pasta and the chanterelles are plentiful this time of year. It's been a lot of time in the woods foraging, so very much about the mushrooms. So it's a highlight of kind of what's in season all around. I would say that most of the time is in the preparation and kind of setting yourself up to actually execute and build the lasagna. In all it takes a couple hours, most of the time, spread through my death.
