He commissioned local gold miners to tunnel the underground cellars. It took over 60 years to dig the tunnels by hand. In 1888, Ballarat businessman Hans Irvin purchased Great Western. Irvin hired Frenchman Charles Pylot to produce the first metto de champenoise sparkling wine in Australia, including the unique Australian sparkling red wine. That was the perfect timing because it was a champagne boom in Australia. Beno sepul, second generation of wine producers from Boros's famous sepul field, took ownership of the winery in 1918 and continued this streak of success for the winery.
