I make Custom Cakes and Cupcakes for any occasion! Recently I have added a few fun things to my menu, these items include Inlay Pattern Cake Rolls, Chocolate Covered Oreo’s, Chocolate Dipped Pretzel Rods and Molded Chocolate Pretzel Rods! Doing cakes (or other treats) was not something I ever thought I would be doing, until a few years ago I didn’t even know that I had the talent to do it and I definitely never intended to go into business doing it, it all just fell into my lap. I put my heart and soul into every cake that I make, for me it’s not about hurrying and getting a cake out the door and taking your money, its more than that, I absolutely love what I do! After paying high prices for cakes every year for my kids birthdays and being left disappointed several times by not getting what I asked for, in 2011, after being disappointed in my daughters 3rd birthday cakes, to be even more disappointed a week later in my other daughters 5th birthday cakes and 2 months later I was left disappointed yet again when I picked up my sons first birthday cake I vowed that I would never again buy any of my 5 kids birthday cakes and I would try to make them for them so that way if it didn't turn out how I wanted then I could only be upset with myself and not someone I paid a lot of money to. Since, I have had people asking about cakes. I initially didn't want to get a business license as I didn’t start doing cakes as an intention of starting a business and wanted to stick with friends and family because I am still learning, I think I am far from delivering a perfect cake but my family, friends and customers seem to disagree with me =). Now, I have come to realize that I will always be learning. After a text from my aunt (and only 2 cakes under my belt) in 2012 asking if I could make a specific cake (the giraffe) for her friend, it all started from there. I finally finished the long tedious process of jumping through hoops and obtained by business license, it only took 8 (long) months! As easy as myself and everyone thought it would be, it turned out to be a long and tedious process. Getting state certificates and a business license to do anything food related is a LONGGG process. Although I am a perfectionist, I am still learning, therefor it takes me longer than most "cakers" to complete some cakes. I'm also not about completing a cake quickly just to get it out the door, I have a lot of heart and I put effort into my work. On average 20 hours, sometimes more. This is also partially because I do a lot from scratch and I didn't have big equipment until recently. Hank, my Commercial KitchenAid was my first really big investment and we have become best friends! He has really helped me cut some time in some areas and I think I’ll add a girlfriend for him in the future as soon as I'm able to take on another big expense ;). Can I just tell you how nice it is to have him take over some of my work while I do other things…heaven! As said earlier, I do a lot from scratch. I am not a fan of buttercream, however I like mine so I will always make it from scratch, once you have had real buttercreams and frosting and not the pre-made that is sold in stores, you would probably never go back ;). I also use marshmallow fondant, which also is made from scratch. Although the fondant I use is more time consuming to make than purchasing pre-made from a store and a little harder to work with (in my opinion), I choose to only use it because it doesn't taste like clay (as I think pre-made does) and it’s actually really yummy! Because I am so key on if I'm going to make my cakes look good I want them to taste good too, I also try to use "better than average" ingredients. I use pure Madagascar vanilla in anything that takes vanilla, any other extract is pure as well. Eventually I would love to start making and using my own vanilla extract but I haven’t had a chance to venture in that direction yet =). I also use fresh eggs that come from our very own spoiled chickens, they are very well taken care of as pets and fed the best and have nothing additionally added to their food (except for the occasional treats of course). Any chocolate dipped items that I do I use the highest quality of chocolate I can get without being tempered rather than what most use and consider chocolate but is really candy melts or coating or what I consider “fake chocolate”, this to me tastes like wax so I refuse to use it. Unlike most who are in my field I LOVE trade work and I love giving back. I do this often! Although I may not always be interested in what you have to offer because it doesn't work for me or I can’t always give back because I've donated a lot recently, please do not hesitate to ask =).
