The Bobby and Shawn Viator team. This ain't his first Rodeo! Bobby Viator, our master smoker, previously owned Sugar Oaks Smokehouse in New Iberia which he sold about 15 years ago. People still remember and rave over his beef jerky and smoked sausage today! But the story goes back even farther in time...the Viator family owned a very large Pig Farm back in the day and sold many-a-pig to local buyers such as Frey Sausage, remember them!? So the smoked products we will sell at Acadiana Jerky Co. come from tried and true recipes and from many years of experience! The brick and mortar, or should we say, the recycled metal pipe, rusted roof panels and the chevron cypress walls! Our buildings were designed by Shawn and built by Bobby. The foundation began just after the August 2016 flood and after many two-steps & waltz's with the code officials - ok, that made it sound fun, but you know how it goes..and many hot southern Louisiana days, two precious buildings emerged and were designed to look like an old time Train Depot. The buildings sit right where an old railroad used to pass and the train still comes right up to the road, across the street from the front of our building!
