Hey, how you doing? I'm Bobby Benjamin. I'm here over at Urban Market and I'm super excited today to actually talk to you about this special grab during this next week. It's going to be a braised short rib. We actually use Tennessee graph fed farms. I'm super, super excited about it. I mean, it's the absolute best wagyu beef that I can possibly eat. This is going to be with coconut, braised, a little bit of basil. We're finishing with a little bit of thyme zest and coconut amino folks. Come here and we'll have it here in Taylor's yard. Hi, I'm here to suggest some wines for these amazing short ribs. My first choice would be my go-to, which is St. Cu00f4me Co. de Rhone. What'special about this wine is it's 100% syrup. It's a medi It won't overpower the dish. Also, it's a really old winery too. Louis Barol, who is the owner, is the 14th generation in his family to own this property. This is also available by the glass. So if you order this in the restaurant, you can have a glass of this or a bottle. And if you take the ingredients home to make, you can buy it on the retail side. It retails for $18. 99. My second choice would be sort of an upgrade. And that would be the Nyer Sage Canyon Red. So this is a California wine, but they're using old world varietals So it's got that earthy component that you need, but it also has that fresh, bright fruit that you find in California. My last choice would be sort of the wild card, something off the beaten path and something a little different. And that would be a Lambrusco, which is a sparkling red wine. Now this is not your grandma's Lambrusco. We're at Sweet. This is bone dry, lots of acidity that complements the fat in the dish. This retails for $18. 99, and the Nyer's is $29. 99.
