I just wanted to find out how to make chocolate. What do you do behind the scenes here? We buy both chocolate, we process it, and we make all the centers, all the fudges, all the toppings for the ice cream shop, all the truffles, all the brittles, family recipes, getting back to 1945. Over the years that I've been in it, I've seen the dark chocolate segment grow. And one time we did 90% light chocolate, 10% dark chocolate, now we're doing 60, 40 dark because dark is really heart-healthy.
