You are such a good fit for s How did you get started making paletas? My mom started her shop. I used to go in a helper and me and my wife talked and we decided to open one. We have a lot of options, we got shakes, we got nachos, we got chile de chis, banana splits, chicharru00f3n preparado, de freman gou00f1adas, raspados, the Mexican corn, the strawberry banana craves and we came up with the new crepe, the variable shake crepe. Today we're going to make the Cookies and Cream Paleta, right? Yeah. Yeah, that's fine. All right, let's make a paleta. So this is a paleta mix base. We start by pouring in our sugar. We're going to add the vanilla. So once this is mixed, you add your cookies and cream to the mold. The paleta almost gets the same amount of cookies, And how many paletas do you make on a weekly basis? In the s Wow, that's a lot of paletas. Once the paletas are evenly spread with the cookies, all you do is just add your mixture in. Every little mold has the right amount of milk cookies in it. All you do is just grab your paleta, the paleta sticks, and stick them in there. Oh, brilliant! It's already attached. Grab your mold, put it in the machine, and then just wait 15 to 25 minutes at all the pans if it's water-based or milk-based. You're blowing my mind right now, Francisco. Okay, not only are you not inserting every stick individually, which is what I had in my mind, it takes 15 to 25 minutes to freeze a paleta. Fully frozen, ready to eat. Ta-da! This is how it comes when you get up from this job. Are you ready? I was born ready for this. There you go. This is phenomenal. This tastes exactly how you would hope and imagine in your mind that a cookie in Korean dessert would taste. There'something for everybody. There's chile paletas, polpalindo paletas, fruit paletas, cereal paletas. There's a whole cookie right in the center. Yeah, there's a lot of cookies in the paletas.
