What does it mean for a whiskey to be a sweet mash? In order to understand what sweet mash is, we have to understand what sour mash is. Sour mash whiskey means that you take the mash, which is the blend of all of the grains, you ferment it to create basically a weak beer, known as distiller's beer. You ferment it and then you put it in your distiller, in your still. Now, with sour mash, you keep a little bit of that spent mash, that mash that you're done with, and you use it to kickstart your next round of mash. Sweet mash means you don't do that. It means every mash is a brand new batch of mash. You're not using any of your old mash as a starter for your next mash.
