G'day and welcome to Muffin Monday. Today I'm going to cook one of my favourite ones of all time, Orange and Poppy seed muffins. For this muffin recipe you're going to need some self-raising flour, caster sugar, buttermilk, melted butter, some fresh squeezed orange juice, poppy seeds, an orange and one egg. Also the ingredients list I have down below is for a standard 12 tray muffins, if you just want to do six then just half the measurements. First add one to two tablespoons of poppy seeds, then put in some of your buttermilk. The reason I'm doing this is so the poppy seeds will soak in some of that buttermilk which will make them nice and soft. Next add two and a half cups of self-raising flour and three quarters of a cup of caster sugar. Then sieve to combine. Next pour in your whisked egg, then your poppy seed mixture and the rest of the buttermilk. Then your melted butter. Fresh squeezed orange juice. And finally the zest of one orange. Then stir to combine. As with all muffins be careful never to over mix, otherwise it'll cause the muffins to come out dry. Next lightly grease your muffin trays, then evenly spoon the mixture into each section. Now place them to a preheated oven at 190 degrees celsius for 20 to 25 minutes. They're coming out looking fantastic. To check they're cooked just place a skewer inside one of the muffins. If it comes out clean they'ready. Now it's time to give one of these a go.
