I had no money, no business plan, and no clue what I was going to do. I just knew I wanted to get my Chicago food back in my life, and I wanted to come to the city, bring the delicious pastrami and all the meats I make to Portland, and an easy way to get started was to keep trucking Portland versus a brick and mortar. Pastrami zombie happened because I made this wonderful sandwich called Pastrami Zombie at my restaurant. It was such a hit, it created zombies for my meat, and I said, I need to go sell this sandwich out to the world solo. And Pastrami takes seven days to make. I get a brisket, I trim it, I brine it, I smoke it, I steam it, and then seven days later you get this magical sandwich where literally every bite has been thought about. How's it going today? Oh, hi there. What's up? We have We want to provide you with a really good cheeseburger, really awesome pastrami, alternative fish, and then we get to have fun and do other cool things when we smoke. That's what I'm known for is making my own meats and barbecue. It's more than just a sandwich shop, it's a commitment to my community, and it's a commitment to making people have a good time. I
