New at 10. It's a Kansas City, Kansas holiday tradition, almost as old as the city itself. Fox 4 photojournalist John Hidook takes us behind the scenes of Strawberry Hill Povatica. The correct pronunciation is Povatica, pova, titsa. The Croatian word that means rolled or swirled bread. Food is a big part of Croatian culture of any cultures. But pova titsa literally is. It's kind of a heart and soul of it. If you're Italian, you might know this as goodbye. If you Polish, you might know this as mock or mock of pizza with poppy seeds. My great grandmother came to America, decided that she wanted to live in Kansas, brought her rest. Pova titsa recipe with her food is a great form of Croatian culture of any cultures. But pova titsa literally is. It's kind of a heart and soul of it. The Croatian settled in the West bottoms here in Kansas City in 1903. There was a great flood and found a hill called it Strawberry Hill. Rest is history of Kansas City. Everything that we do here is based on what my grandmother and her mother did. Everything here is still done by hand. The old fashioned way. While we don't use bed sheets anymore, we use typical while we don't use a little baby oven. We use a little bit bigger oven, but they're brick ovens and they're probably 40 to 50 years old. I'll give you kind of a secret. The dough just holds all the filling together. There's a 15 ounce dough ball that we use for every two and a half pound loaf of pova titsa. And if you start doing the math, that's a pound and a half or more filling and green loaf. So it's all about the filler, whether it's the English Walnut, the n Oh my gosh, even the chocolate, the chocolate pova titsa, coca-lada, the correlation worth the chocolate is crispy. It's gooey in the center. It's fantastic. So I guess the more work you put in, the more you can eat. Maybe that's it. I don't know. My family's favorite thing from Kansas City.
