Eddies Cakes

My name is Mark Wickliffe. I purchased Eddie's Bakery in 2007 and I found something that I truly love. We've been very successful here. We've grown the business substantially and created some new products but we didn't want to do anything to take away from what was already going very well. One of the things that we've done is we've expanded our breakfast menu, changed our lunch menu because that was my strong suit coming into Eddie's. It certainly wasn't running a bakery of the magnitude that Eddie's is. We offer cakes, the things that you see behind me, the wedding cakes. We're very popular every single weekend with the folks for their baptisms, for showers, for anniversaries, and certainly for weddings. So people can come in, they can pick up a pastry, they can place an order for a birthday cake or graduation cake, head on over to the cafe. So we hit a lot of the boxes for folks in our market. Tonight what we've decided to do is go back to something that we actually supplied my very first year here for the California Restaurant Association dinner. The double mousse, it's in the shape of a dome. We filled that with a dark chocolate mousse and a white chocolate mousse. We've made a ganache that has a nice shiny glaze to it and then we finish that off with some gold leaf and a little decoration of a marble chocolate on top.
