time for a look at the arts. Here's Adam and we're starting things off. Seeing as it's Monday with the latest restaurant open in Victoria's old town. After being a bit of a revolving door for restaurants over the past couple of years, the former home of the acclaimed Harold Street Cafe is now Jam Cafe. But be warned, the heads of this new eatery are engaged in a fight over flavors. In this kitchen corner owner Jim. I just have a nasty sweet tooth. Yes, too much sugar. He's betting on Jam's red velvet pancakes. So basically it's a chocolate cake. We use buttermilk, sour cream, and lots of red food coloring. And this is Chef Buddy sticking up for all things savory. Because I don't I'm not a big sugar guy. Still, he tops them with maple syrup, infused whipping cream, and sprinkles, a favorite of Jim's kids. So I just finish whatever they don't have. Your arm gets twisted, right? Yes, right. He also plays the role of Jam'scavenger in chief, as you can see from the restaurant's walls. What, getting collecting stuff from my dad, he used to take me around in his garage sale hunts on the weekends. And I, Now my kids complain about when I take them somewhere for garage sale. While the front of this restaurant is filled with Jim's finds, in the back, Buddy begins his savory assault with huevos rancheros. Butters, the secret to everything here. We use so much butter. So we're going to put our jalapeno cornbread down on the grill. So locally smoked cherries are what we get. Then two eggs are fried and plating begins, first with beans. Keep everything from sliding around. Layered between tortillas. Our jalapeno sour cream, another layer on top, our crispy tortillas. Put our cornbread on. On goes the chorizo. That's followed by the egg, still slightly runny. Then we're going to finish it with our guacamole. Everything here is house-made tomatillo sauce. With a little bit of fresh cilantro and fresh tomatoes. The final savory product, Buddy calls a tasty touchdown. For me, I guess savory would be That's nothing to all the people on skates. It's a manly thing to do. And so it goes. Although Jam aims to be the place, opposite pallets can find a certain amount of peace. That's right, there's peace here. But I think sweet runs out more.
