Takoma Bev Co.

Hi, my name is Tia Redford-Mongol and we are here at the new upcoming restaurant called Bevco. We serve, which will be serving, coffee, beer, cocktails, and wine. You see, the different thing about this is that it has a connection to our Blair family. This cafe is being made by our own Chris Brown. You guys might know him, but you guys might know him as songwriter and But actually, he used to be our old AP Environmental Science teacher at Blair. Mr. Brown used to be an AP Environmental Science teacher at Blair and he now has opened a new restaurant here at Tacoma Park called Tacoma Bevco and we're going to ask him a couple of questions. Yeah, so when is this opening first? So we are, we have our last inspection tomorrow morning and we are opening on the ribbon cutting ceremony is Sunday at 4 p. m. Mayor Kate Stewart's coming out to do a ribbon cutting. The ceremony should come, it's going to be a big party. So why did you Has it been I've always loved the food and beverage industry, restaurants and service and all that kind of stuff and in high school and college I worked part time doing picking up jobs here and there to make a little extra money and then during the s Okay, so we already know that your old job was at Blair, so why did you quit your job I didn't want to, so the plan was to teach part time, do teach three classes and then do this on the side but then my cousin couldn't do, take on a big role because he placed Tuba for the National Symphony Orchestra and so he wasn't able to commit time and he works in Virginia, he lives in Virginia so if someone called him sick I would have to come in and cover shifts and he wouldn't be able to make it so I decided that it wouldn't be a good move to teach and do this because it would just take too much time. So Oh man, so because Well so we also have a liquor license so we have beer wine and cocktails which is different than the other coffee shops in the area but my cousin is just a, he's a coffee genius, he goes, he competes in the competitions, the national breads and championships, he goes to the specialty coffee association meetings all over the country, he just knows his stuff, he's an excellent barista and an excellent teacher and so all the breezes that he trains are solid as well. What type of food is it going to be So it's cafe style so we have breakfast sandwiches, salad, granola, small plates It's You can have it sandwiches, salads, I mean you can get anything you want. Yeah it's more casual. Yeah it's not It's kind of So I'm the general manager so I have to be here all the time, I do all the hiring, firing, menu development. I can fire people. Making sure everyone is showing up on time, doing their job, all that kind of stuff so it's going to be pretty busy and then we're actually moving into Polly Sue'so we in a week Polly Sue's moves down to the beat store and then we're getting that space as well. So would you say that you have any other commitments other than this? The cross? So this is definitely going to be my thing for right now. I'm going to see if I can have, if I have time for other things I would love to do things So I don't know how much time I'm going to have to do much of anything else right now but I love staying busy, I love coaching LaCrosse, I would love to get back into teaching if I can ever have time to do that again so. Okay we're about to get a tour of Tacoma Bevco. So when you come in, this is my cousin Seth, he is the coffee director. We'll come in over here, pastries will be here on the counter, the espresso machine coffee is in there, over at the full bar, the wine beer and cocktail, you have 10 beers, 10 beers on the counter. This is the elegant anti-room that goes into the bathroom, you have music in the bathrooms, the hall, the hall court. Okay. If you come back here. Here's our little gourmet kitchen, ovens, everything you need to make amazing food, three makes a sink, a dish area, and that's it. Awesome. Awesome. This Starbucks may be a competition to Tacoma Bevco but I don'think that will face Mr. Brown.
