Today we're going to meet Symposi Let's go in here! Symposi They focus on East African and Geisha coffees which are fruity floral and complex and make sure their coffee beans are ethically sourced helping local businesses and the environment. I spent seven years in the British Army served in Royal Anglia in Regiment so I've been to Kenya twice. Even though it wasn't You've got a bit of a point where I felt less valued than what I had actually to give. So actually left and life's actually quite hard when you leave the Army because I was in the infantry as well. So when you have no qualifications this isn't an absolute nightmare. I found myself doing sales for a connection. I ended up working at a brokerage house. Things didn't work out and I moved back. My ego was so big that I was going around with these estate agents. Going, oh give me a job. That kind of thing. I went in about eight bases and they all said no. One person actually referred me to somebody else and I got a job through that. But then how did you get from there to the coffee? So you've already been to Kenya this point? Oh yeah, that was the first time I went to Kenya this year in 2011. So then I went again in 2014. When I went to Afghanistan that was in 2012. I left the Army in 2016. So I didn't work in sales more. During that time, back at home I've had my little one kilo roaster so it's kind of just been a hobby. And I thought I've done sales. I can sell something I found that with coffee. I've been focusing really on filters more than How did the name come about for Symposi Oh that's a good one. So the name comes from Plato's dialogue which is my favourite work of philosophy. It's by Plato Symposi I think what I was mentioning at the start, especially when you look at coffee, is focusing on the origin and where it comes from. Knowing who the producer is and where it's growing, the terrier and all these different things that you will have in effect on the coffee itself. And I think it's amazing to really know where it comes from. Lewis wants a coffee! The machine is a DCW-15, just a three kilo machine. I've powered my gas to gas This thing here is so, lots of coffees in this thing come out, comes down into there and it gets softened up like a vacu It's a dystono, sometimes you get little stones in the vans. So if you had to get down, it just runs away and things and it actually stops up the panic. You go see them somewhere. Years ago they had these racing software, so they used to make them in the industrial op-nut. But you weren't able to record your race, so that's a big factor in why coffees are great. What are you checking for? You need to have the right amount of oxygen and the right amount of heat. So there's loads of different variables. One thing is So what's happening now is basically the coffee's coming out and it drops in and because it'so hot, it doesn'turn around from these in the little conveyor on the rotor. It would obviously carry on that sheet roasting. So that's the cause of being down. Music For me, this one has a little bit Yeah. Yeah.
