We wanted to make the absolute best tasting nitro cold brew that we've ever experienced. My name is Jesse Fish. I'm the general manager of Seattle Coffee Works. For a little micro-roastery here in Seattle, we source all of our own coffee and roast all of our own coffee in-house. We have two stores in town. Our flagship location and our roastery is at Firsts and Pike, downtown Seattle. And then we have Ballard Coffee Works and Downtown Ballard. We started this nitro project because were inspired by other companies who were doing it actually and we thought, hey, that's a really great idea. A little group of us got together and we have a lab in our downtown shop and we got together in our laboratory and started R&D. So part of our development process in creating the perfect nitro cold brew coffee was figuring out how to nitrogenate the coffee so that the velvety texture lasts longer in the glass. In order to propel the coffee and to keep it nitrogenated, we had to figure out exactly the right pressure to use. The process to make a batch of cold brew and nitro is first, cold brew. We cold brew our coffee at room temperature for 12 to 14 hours. And then after that, we keg the coffee in a Cornelius keg. And our ratio of coffee to water is a little bit different. We use a little bit of a stronger mix for nitro coffee. And then after that 24 hours of brewing, then there's another 24 hours of pressurizing or we subject the coffee to about 80 psi of nitrogen. So after the coffee has been pressurized, we then connect the Cornelius keg of then pressurized coffee to our coffee draft system. The perfect glass of nitrogenated cold brew coffee is one that stays nitrogenated the whole time you're drinking it, has that great velvety feel. And the flavor profile you'd expect from the Seattle Coffee Works base blend is some really nice sweet berry tones, key lime, and a little milk chocolate. Customer response has been overwhelmingly positive. In fact, towards the end of s This is definitely just the beginning of the project. Next we're developing a single origin offering. We could also venture off into Tascara tea or even cold brew chocolate offerings. So come down to Bowered Coffee Works.
