Josey Baker Bread + Four Barrel Coffee = The Mill


I'm Josie Baker. I'm a bread baker, owner of Josie Baker Bread and co-owner of the Mill Cafe Bakery. We make whole grain sourdough bread. Most bread is made in factories. It's made very quickly. With flour that's very old, it's made so that it's affordable. There's this resurgence that's happening. What we do at the Mill is happening all over the place, which is we're trying to make the best bread that we know how to make. My name is William Warner, chef, owner of Crossman and Wolves, Valencia Street in the Mission. I've been here about three years, very kind of seasonal driven pastry shop. The name is a nod to someone in pursuit of his or her passions and the wolves are the trials and tribulations. We're in a place where people really value the craft that we're in love with. You're already building a community, I think, in San Francisco. You get all these people that come in that are musicians or filmmakers or building sculptures and they come in and I would do something I think it would be hard to take and transplant that somewhere else. I think we both represent handcrafted products. We're all working towards the same thing. I think that's really something we take a lot of pride in, in our aspect. We do everything that we can in-house. And to be able to make them beautifully and consistently, you have to have made them thousands and thousands of times because we're not machines. And when machines do it, they screw it all up. Here's to good stories. All right.
