There have been a lot of things in my life that have taken my attention from other focuses and coffee has been one thing that I've been able to focus on. Something as we started this business, it challenges me because it'so fascinating just how complex flavors can be, how many things can alter how things taste, how things feel in your mouth, how the experience happens. The first coffee I had in the specialty industry was a coffee from Ethiopia that tasted It was alive and vibrant, an entirely new world that I'd been introduced to and that's what I'm looking for in these coffees that we search out. So many people talk about coffee doesn'taste as good as it smells and we So what we look for is exceptional coffees that have been grown well, that have been processed well and we therefore strive to roast them well so that the end result is exceptional. We break it down piece by piece and we look and work to control as many of the variables as we can. We try to have a diverse spectr We Our Espresso bar was originally a workbench and we did a build out and made it a mobile coffee bar. All we need is to roll into an event, plug into an outlet and we're set. Often we're serving over 200 people in a couple of hours and so we know what it is to work efficiently and what it is to work precisely as we're still making each drink to order. We're making each Espresso with the time being controlled, with the weight being controlled and giving each person a specific drink crafted for their enjoyment. The best part of this whole process is when we get to serve our final product to our friends and customers. The moment at which they taste what we're tasting, the moment at which this experience comes to life for them. We set out to honor this craft that we love so much and to see that happening, to see people get excited about our product and to enjoy it helps us to keep going. We want to create a consistent experience in the way that we treat people but in the way also that we prepare their coffee.
