People ask me why blackbirds bread is so good. How are they the DJ cow to bakeries? The best sourdough, the best focaccia, the best baguettes, all they do is win. Part of the reason beyond ingredients recipes or methods is that the bread is chaperoned 24 hours a day. Everybody knows that bakers get up early but a busy bakery actually never sleeps. It's in operation 24-7. At night when it's quiet and cats into market they're loading up the deck ovens with sourdough and the thing you've got to understand is that bread is alive from 5 30 p. m. when they begin the mixing process to baking at 11 p. m. the next day because it's a living culture subject to the slightest change in temperature or h Not that anybody'sitting around mind you. The activity in this kitchen is staggering. This morning as we go about a hundred daily tasks making croissants sandwiches and pastries in an already crazy busy workspace with not a square to spare because of an accident we have to remake 600 buns portioning and rolling through end for the bakery and through out of more fur across the street only getting them out of the oven just as San Cosme is opening for lunch the delivery of Tulara buns getting sliced fried and stuffed from Mexican sandwiches and all the while the dough bubbles away another batch waiting for time and temperature to turn into the best bread in the world.
