Organic, Hearth Baked, Sourdough Bread


contact: [email protected] Community Loaves started in 2011 here in Jacksonville as an organic bike-delivered subscription bakery. Sarah, one of the founders, and Meredith, the other half of the baking duo, met in the fall of 2012 when Meredith moved home to Jacksonville. Sarah was looking for a new baking partner and Meredith had just completed an apprenticeship at an organic sourdough bakery in England. Fate! We now bake all organic, sourdough bread and are excited to be part of the growing community of movers and shakers in Jacksonville, where the passion for thoughtful food is on the rise. About the bread: Sourdough is a process of baking bread without the use of commercial yeast. Instead, naturally occurring yeast and lacto-bacteria are captured and kept alive in a "sourdough starter." In combination with a long fermentation time, these methods create a healthier, more traditional (and more delicious!) bread. Sourdough bread, in comparison with conventional "yeasted" bread has a lower glycemic index, more available nutrients, stays fresher for longer, breaks down more gluten, and pre-digests starches, making it easier on our digestive system. All of our bread is made with organic ingredients and hearth-baked. Don't take our word for it, try it! Tips on Bread Storage: Get a bread box! But short of that you can just loosely tie a plastic bag (one of those grocery store bags everyone has a few of in the house) and leave your bread on the counter. This prevents your loaf from drying out, while also allowing a little but of air in to help prevent mold. As of October 2013 we deliver fresh bread to the following locations: Tuesday- Grassroots and both Native Suns locations Wednesday- Sweet Theory, Mid Week Market in Atlantic Beach (3-6pm), Black Sheep Thursday- Grassroots Friday- Grassroots, both Native Sun locations, Sweet Theory Saturday- Grassroots And we are also at the Riverside Arts Market on Saturdays! sarah + meredith


I think everyone really respects someone who makes something by hand that they realize is a difficult thing to do and they do it regularly and they have a passion for it. I love being able to use organic ingredients. I love that sourdough bread is using traditional techniques. There's just so much science behind sourdough bread that tells us that we unlock more nutrition. You can keep the bread fresher for longer. It has less gluten in it. There wasn't a small artisan bakery here in Jacksonville so it seemed It's called Community Loaves because originally when my partner started it she was delivering bread every week on her bike and people would be paying for a month of bread at a time but then we started a storefront and so now we're here five days a week and we have regular customers and we have people who are part of the Murray Hill neighborhood and it's just become us creating our own community in this really small space which is kind of nice. When I first started baking I thought this is what I want to do for a couple years and then I'll be on a farm and that was just a clear vision for me. What I love about our bakery is that we do get to participate and farm the table. I love having local foods available and buying food seasonally. It is funny that I started this business because I wanted practice for one day being on a farm so it's almost I am glad that the skills I'm learning now could one day translate into owning my own small farm.
