IL Gelato Hawaii

Well Hawaii is definitely for me as a surfer and kite surfer the place to be. It's paradise. We are very connected to this island but we always felt the one thing that's missing here is great gelato. Were at a point where we felt we wanted to do something together. About 20 years later we said let's do it. When I eat really amazing gelato the first sensation is the creaminess and the next sensation is it's absolutely pure. The taste initially is really subtle and then as it warms in the mouth it becomes more intense. One of the main goals of making gelato for me was to make one of the best in the world. Early on I studied the science of gelato making and since I'm a physical chemist by training a lot of the science is pretty intriguing to me. I really discovered that's exactly what I wanted to do. Applying my knowledge of physical chemistry to make one of the best gelatoes ever. So what makes a great gelato? First of all it's the flavors. We spend a lot of time sourcing ingredients. Were talking at farmers, were sampling a lot of coffee beans and pineapple and mangoes. The trick is to use a lot of the food when it's ripe. So you want to have a very clean and distinct flavor profile. The second important thing is the texture. So the gelato has to be very dense and rich. Is it creamy? Is it smooth? How does it exfoliate in the mouth? We basically freezing it with a batch freezer and then afterwards shock freezing it at very low temperatures. So the gelato becomes creamy and stays creamy with time. And third of all it should be authentic so the way the Italians make it. Yes it is absolutely traditionally using only Italian machines. Yet authentic also means it's very authentic and true to what you can I believe in. When I eat really good gelato I feel total happiness. It's when the gelato melts in your mouth and you get the sensation of the flavor and the textures and the cold. There is this moment of silence. They have this wow smile and see in a way I mean that's what it is all about. It's right in this world where we can actually have everything. It'something that allows this moment of stillness. It's just pure joy. Nothing else. Thank you.
