My name is Carla Blackman and I am one of the owners of Mr Cooper's coffee house. So Mr Cooper's came about from a lack of specialty coffee in the Whitby area. We felt there was a gap in the market and we thought we could bring exciting and interesting coffee to the area. We also wanted to create an all-inclusive dining experience for those with dietary requirements, which again the area lacked at the time. So we wanted to be able to show that people with allergies and dietary requirements could sit and eat as a one and enjoy fun and exciting creative food. So we'd already been toying with the idea of second premises. We'd sort of looked around the Whitby area but nothing had really popped out to us. And when we heard mountains were leaving we knew straight away that was the home for us. Middlesbrough has had a long relationship with independent businesses and we felt with the loss of all the major change stores that this was not as much chance to rebuild that thriving community of independence again. It was already a well-established coffee house in the area and we knew what we had to offer. Hopefully the Middlesbrough people wanted. We've used roundtons in Whitby now for the last five, five and a half years and built up a great relationship with them. So obviously taking over their old spot here on Bedford Street, we knew we wanted to keep the Granary Blend as our house blend here and then which allowed us to offer in speciality coffees on a monthly basis. We teamed up with roundtons because they're EFOS and in sustainability matched where we wanted to go, where we wanted to take the business, who we wanted to deal with. So we now do our coffee supply. It's all in reusable tabs. We go and collect, cut and down on the packaging. We offer a refill station so we bring it back here. We refill it, refill our little dispensers up and allow people to bring in a vessel of their choice to fill and weigh and take home with them. My name is Jamil and I roast coffee here at Roundton. We have a n Those people are people we have direct relationships with. Those people are direct representatives of the farmers at the source origin. So we are very close really. There's a high degree of transparency for all of the coffees that we have in terms of their origin, the farmer, the green merchant between us and the farmer and of course us as Roundton and the coffee that we have here that we roast. In terms of green selection, the process is very much that we'll perhaps have an origin of interest or within the framework of our current and existing suppliers. We will just call in regional varieties of the different coffees that are available, say perhaps from Ethiopia to Kenya to Colombia, perhaps Brazil, Indonesia, Peru. So historically we've always had coffees from the most prominent, I guess the most prominent coffee areas or parts of the world, coffee growing regions. Middlesbrough is different. Middlesbrough is great. Middlesbrough is So it's made us rethink slightly what we do and what we offer. The name Mr Cooper's. So common misconception, people think Cooper is our surname. It's not, I'm sorry. Cooper is named after our middle child. It's his first name. He is the reason behind the business, I guess. He's got all the allergies, peanut and sesame. So we're a peanut free site. Both shops are as standard with blanket across the board and he has more protein in tournaments. So a lot of what we've done both drink wise and food wise is built up from him and his allergies and our experiences of dining out, eating at home, what you can and can't have, where you can go, where you can't go. The name was chosen to hopefully show that we wanted to have a little bit of fun, a little bit of cheek with it. Coffeehouse was a big word for us. We didn't choose that one lightly. We knew we didn't want to be another cafe. Went a restaurant, went a bar. Coffeehouse meant that were serious about coffee and we wanted to bring that speciality coffee to the area. And that name was That was the marker. That was where we had to start and build from. Mr Cooper's is about fun, creative combinations. We make what you don't at home. If you come out, we want you to come out and have something you wouldn't make at home. So you won't find just a ham sandwich on our menu. There'll be a twist in it somewhere. We love that people are now looking for that twist. They're wanting that twist. They'ready for the next menu. We're looking forward to the next menu. We do what we Basically. You'll never find a tuna sandwich on our menu because I don't Sorry. But yeah, we are bruised bagels and beautiful things.
