My name is Tom Wygan. I'm the owner of Two Coffee Roasters here on Nesbitt Road in Fitchburg. We're here at our cafe roast facility. We're right down the street from Quivy's Grove. And we're in a morning rush of coffee customers in our cafe. Any business, let alone a coffee roasting. But it really was a perfect storm of elements that came together. I had a couple individuals who were very passionate and very experienced in coffee roasting. Came to me and wanted to start a small batch roasting business. Combined that with a revelation of food and locally produced quality foods that are prominent in Dane County and Southern Wisconsin. And then I'm kind of a serial entrepreneur. I love starting creative businesses that are about food and passionate people. And so that perfect storm came together and we created two coffee roasters here and open for business just this fall. So my name is Steve Yeasel and I am co-owner and I'm director of the Wholesale Sales Division. Well selecting the coffees is a lot of fun. What we do is to ask for samples from our importers and we go through a process called cupping. And that involves grinding the coffees fairly coarse, pouring hot water on them and smelling and tasting everything that there is in the coffee. So really what it does is it gives us a chance to very objectively choose the coffees that we want to use for our origin coffees and also that might fit well in our blended coffees. What we do here is called micro roasting. It literally just means we use very small amount of beans for each roast. We have a 12 kilo cast iron dr And so very specifically what that does for the coffees is it allows us to hit the precise roast point that we want to hit to preserve the flavors that we're aiming for. And then we're going to make blends out of those coffees once they're individually roasted. We believe that a premi We make our coffee, we put them in small cans and recycled cans. You can bring back in, refill and have the coffee to serve you the rest of the week.
