Cafu00e9 J The idea came as a neighborhood needed a place for people to hang out and have a cup of coffee. As far as the people come in here, there's a big mix. The university is less than a mile away. We're surrounded by schools, elementary schools, high schools, and there's quite a lot offices around the neighborhood. The art and the walls changes every five weeks. We figured we want something on the walls, we don't want anything permanent. And there's a lot of art and culture in Pilsen. So the idea came, hey, I'll get artists from the neighborhood to exhibit or put up their stuff. And this way we help out the neighborhood as far as also changing the artwork and keeping it fresh here. And everything's for sale, and we collect no commission on the artwork. We get to know customers by name basis, we get to know what the regular item is. Whenever we give out this quality, we do something, we do it consistently. I have an extremely low turnover here in employees. My average employee lasts six to eight years. Most popular item, drink wise, would be a choco espresso. That is But we substitute the regular chocolate with a Mexican chocolate. Sandwich wise, we do a variety of sandwiches. Anything from cold sandwiches to the hot sandwiches. The best selling sandwich is going to be a chicken salad sandwich. It'something different in a Mexican neighborhood where all you find is stock clothes and stuff Now this neighborhood is changing, so we get a little more variety. We've always had a mixed generation come in. I've seen kids grow up. I had this one kid, for example, he started coming here in fourth grade. He just walked in one morning and said, I'm going to try everything on your menu. I want to start with the first thing. Okay, regular cup of coffee. He came in every now and then and tried everything on the menu. He's now graduated from Northwest University with a law degree and is a lawyer out in California. And still, when he comes to visit his parents in Chicago, he still comes by since he's alone. And it'something that I saw you grow up. So many people have met here and gotten married here. And then we see the families evolve. Then they have their kids. And then they start one of the schools in the neighborhood. It's a growing community.
