Alrighty, I'm down here with Darren from Cedarburg Coffee here at the Milwaukee Public Market. Darren is going to be doing some roasting today down here at Cedarburg. Darren, what are we roasting today? Today we'll be roasting our Tanzanian coffee which we put in our market blend. And that's a light roast part of the market blend. We'll also be doing some Nicaraguan, the dark part of the market blend. Okay, so the market blend, that's your daily brew. Correct. And so how long between when it gets roasted, do we usually see those beans put into the mix of the actual brew? We try to make sure that all the coffee is used within a week, otherwise it gets old and stale and doesn'taste very good. It's usually in the pot within two or three days. Okay, so you actually do some brewing. How many days a week do you do roasting down here? Roast on Mondays, Wednesdays and Fridays in the afternoon. Mondays, Wednesdays and Fridays. Correct.
