Hello everybody, Dan F***ing here. Memorial Day is upon us and as most of Well, I'm about to tell you I'm here at Main Street's Meats with Matt and this is my secret. He gives me all the great meat. So hey Matt, can you give us a little background about the store here itself? Yeah. This is Main Street Meats Company. My name is Matt King. One of the most famous customers here. We opened in 2002. Main Street Meats Company opened in 2002. We purchased in 2006 and we built this brand new USDA facility here. We process all those snacks sticks, pork, biscuits, bacon, and processed all here under USDA. So I know a while but my favorite is the bacon. So that was last year or was that this year? We won two years ago. We won the State Fair Grand Champion of Bacon. Then we won the Illinois State Shows that we go down to the Illinois Meat Process Association. We won three or four times with our burgers that were bacon and apple juice. So I tell It's really great. Now I love to do pool pork and every time I come in here Can you tell these guys what we should look for? What we're gonna do? What we're gonna smoke? We just got in actually 800 pounds of pool pork that we're doing for tomorrow and what it is all the bonus pork shoulders that we use. We use bonus only because it's easier for us. A lot of people I can't promote bones. It takes a little bit of time now. A normal Memorial Day is probably a kickoff to grilling season right? Yep. It always has been so for our steak lovers out there you got any recommendations for them? I am a huge fan of the ribeye. We now sell tomahawk ribeyes which are huge We do a lot of filets and strips. I just We also have So now what's your theory? Do you I usually sear it. I'll usually cook it three four minutes one side and then three four minutes on the other and then if I don't a little bit longer maybe possibly but that's usually about it. That's about it so What's your biggest seller during Memorial Day? Memorial Day we've probably brought some hot dogs. We make all of our hot dogs. We sell five-pound bags. We sell individual rods. We usually do a lot of special tom rods that we can use in rods and hot dogs handkerchiefs. Bacon cheddar burgers. That's great. Well Matt I know you're busy.
