Let me show you how you can choose good quality meat. What I've got here is a piece of our USDA Prime Grate Meat. And what you want to look for in any meat is the amount of marbling, the little flecks inside the meat. If you come across a piece of meat that's void of any marbling, very lean, even though it looks good, does not have the quality of great piece of prime.
