The Schwab Meat Co. dream began in Sachsenhausen, West Germany with the company's founder, George Peter Schwab. After landing at Ellis Island on July 20th, 1890 with several prized "old world" recipes, Schwab set out to make his dream of bringing authentic German cuisine to the United States a reality. In the decades to come, the Schwab family kept the business a tightly knit family operation with an emphasis on building customer relationships and making only the highest quality "old world" sausages and meat products. Today, fourth and even fifth generation Schwab's manage the recently 100-year-old company. As the many generations before them, Schwab's still strive everyday to uphold the values set before them and produce only the highest quality, traditional, "old world" sausages and meat products.


Rob McClendon, Reporting, The New York Times. Well, in this week's Made in Oklahoma moment, our Lisa Hines takes us to an Oklahoma City food producer that we've all enjoyed without even knowing it. Well, Rob, if you've had a hot dog at a Thunder game or a turkey leg at the state fair, you've enjoyed Schwab's meats, a longtime Oklahoma City business that prides itself on putting taste before profit. According to Larry Schwab, they've been smoking meat the old-fashioned way for almost 100 years. We do things the same way that really my great grandfather did them back in 1912 whenever he started the company. We still take our hands, we bone them by hand. They're not done on a machine. You'll never find any bone chips in there. It takes us two and a half hours to cook a hot dog. For the cons It takes them 15 minutes to cook that same product. It takes me two and a half hours because I really hit the smoke all this product and we slow cook everything just We do the same thing with our products. A long process, but all done with one thing in mind. Just the taste, the taste of the product, that's the only thing we've kept us, we don't do a lot of advertising. We put our money towards making product better and bettering our product and trying to be competitive out in the marketplace. Products We produce mainly sausage items just about everything we make is what we call RTE, ready to eat. Most of it's fully cooked, hickory smoked from hams, hot links, jalapeno cheddar smoked sausages, little smokies, hot dogs. We really pretty much produce about everything in cooked product that you can think of. Which adds up. A maiden Oklahoma company, Schwab's produces approximately 8 to 10 million pounds of meat annually. We use as much in-state product as we possibly can. We do bring some in out of Iowa, some of my hogs are grown in Iowa, but the finished product all comes out of this plant here. Having Schwab's customers a maiden Oklahoma quality assurance. Absolutely, and we know how they're raised. We make sure that even up in Sioux City, Iowa, with a very small company up there, we know we have, we tell them what to feed the hogs. They're not slot fed hogs, these are actually corn fed hogs. That makes for a much better meatier ham than what you're going to get with less fat, better for you. But we strive to do as much as we can in that area to keep it healthy. And Schwab's meats is the official hot dog for the Oklahoma Sooners and the Minor League Red Hogs. And they're also a member of the maiden Oklahoma Coalition. Yes, they are. They have been for about five years and they're one of over 30 companies that make up the coalition of food product companies. Alright, thank you so much, Elise.
