Today we are once again eating here. This is a pinup inspired butcher from right here in the Tri-State. Started by Navy veteran Allison Hines, also known as Butcher Betty. Now tell us a little bit about how you got the nickname Butcher Betty. Well my husband and I knew were going to start a business. We just didn't know what kind of business were going to start. So we made a three col What were my skills? What do I want to learn and what do I love? And he said well you always want to learn how to butcher and you always wear a great Betty. So that's how we incorporated everything. And that's how I somehow became Butcher Betty. And it just kind of stuck. And here I am and I love it. Well we absolutely love it. I wish This is an easy Christmas recipe you're going to walk us through. It really is. Of course. That's for sure. Because I would be the champion of. Walk is Everything's Better with Bacon I'll tell you. So this is the Christmas pork linen. It's going to be featured. It's going to be featured on the Christmas farm stand market out in Union Kentucky. So this is going to be featured one of our holiday Christmas specials. So this is our Christmas pork linen. Something I developed. It's just beautiful. It's red, white and green. So what you really want to do is you want to take a beautiful pork linen about two to three pounds. And develop a relationship with your butcher. Go to Murphy's out in Union Kentucky out in Florence at the friendly market. Go to Avery Blaze. Develop a relationship so they can take the ease out of it. Yes. So what you want to do is you want to fold out this pork loin. So I've already done it here for you, but you're going to be making cuts really thinly. And you're going to go around and you're going to basically roll it out so that it's nice and flat. So it's beautiful to stuff. That's really what you want to do. And then we want to make beautiful Christmas colors. Oh yeah. So we've got red, white and green. So we have goat cheese, which we're going to lay across here. And then we've got a beautiful roasted red peppers to lay out. And then gorgeous spinach, which fills it out and it also makes it very healthy. Okay. And then you told me this. Yes. So this is an optional beautiful thing to do, especially for a holiday presentation. And that's to braid bacon. So it's almost just And there's a video on And then you just put your beautiful stuffed pork loin after you roll it up again. And then you lay it on top of the bacon. This is perfect. Yes. And then what I really And that's to take a pepper jelly. I And it gives that bacon a nice Christmas because the sugars in there have the glaze. Well, this is gorgeous. Okay.
