This week's feature product is our bratwurst. Bratwurst is traditionally a German pork sausage and it's very lean and finely chopped. First we start by cutting pork and freezing it for 30 days. The pork is then taken out and cut into fist-sized cubes. After cutting the pork, it is then emptied into a bowl cutter where it will be chopped. Spices are added during this step as well. The pork is chopped about 3-5 minutes until it's fine enough to be p After chopping the meat is loaded into a stuffer to be made into links. The casings are soaked with warm water to allow them to expand during filling. A pipe is put onto the machine and then the meat is put into the machine.
