Oli's Fashion

My name is Dustin Parfit, chef and co-owner here at Ollie's Fashion Cuisine. We opened about a year and a half ago here in Wellington, Florida. A little bit about my background. I was born in Kentucky. As far as study and food and where my passion came from for this restaurant and the food we make here, a lot of it started back at Palm Beach when I was a young chef. One of my first jobs was cooking at the Breaker's Hotel. I got pretty much all my classical training from the Breaker's Hotel. And eventually I worked my way up to a couple different restaurants there in Palm Beach where I studied and learned. My partner and I worked in Palm Beach for the last 10 years. When we came out here to Wellington, our whole idea was to bring our Palm Beach service and food out to these Western communities of Wellington. Which, as I said before, is I've grown up here and there's never been a really good restaurant. It's always been Pretty much were one of the first to start our business out here and grow in this Western community and bring in some real food, raising the bar out here so that everybody else has to start making some real good food also. As far as the menu at Ollie's, I pretty much took a little bit of everywhere I've worked and it's kind of a collaboration of all of that. Local seafood, local tomatoes. I'm big into Floridian cuisine, which is kind of Local farms, there's just a crazy mix of different dishes and it all looks good. We believe you eat with your eyes first and when it looks good, it usually tastes pretty good. I believe in that when I cook also. If I'm sauteing something in the pan and it needs a little color or something, I just take that extra minute and give it a little. . . If it looks good the whole time you're cooking it and then you put it on the plate and it looks good, you really got something there. Juan and I, we built this business plan based around bringing Palm Beach style and food out to Wellington. We had a really successful first year of opening out here and we decided to go for it again and open another restaurant called the Grill Fashion Cuisine around the corner. So me and Juan, we pretty much are hoping to do a restaurant each year and hopefully this fashion cuisine will just be all over the place.
