While there are many different achievements in Cuphead, there are a few that scale from easy to get to ticking a lot of effort, and that's why I'm here to tell you how to unlock the hi-hat achievement from the DLC. This achievement requires you to beat an Alphor boss without eliminating any of its minions. This alone practically eliminates half the bosses itself, including Glomstone, Mortimer, and Moonshine Mob, and I'm not even sure you can get it as well from the Howling Aces or Chef Saltbaker, because both the Yankee Yippers and Saltshakers are considered minions apparently on the wiki, so you either get really lucky with one of those bosses, or you try Esther Winchester, and I say that because I somehow, without trying, got the achievement from Esther when I first played the DLC. The only minions you have to deal with are in the first phase, the horseflies and the vultures, but apparently the acme beans are also minions, but other than that, there's not that much in the way of getting the hi-hat achievement from Esther.
