My name is Pollock Griggs. The store's name is Village Bake House. I started in 1996 as a manager at the store and purchased it in 2002. If we got packaged food from the store, were disappointed that we didn't get fresh baked. So for me, it was a passion from when I was little. I started baking when I was little. My grandmother always baked. My mother always baked. As I grew older, I kind of fell into place where then I started thinking about culinary school. It just so happened one of my first jobs was making donuts, which I loved. And then my next job was working at a country club where the baker fell and injured himself. So I became the baker of this country club in New York. The Village Bake House shines because it's the quality and freshness every single day. We really pay attention to that. We try to improve every single day. We look at our work and we decide, did we do our best? If we didn't do our best, we work harder the next day. It's never a burden to make something for people to enjoy. It makes people happy and they really appreciate it. The Village Bake House brings a community together. It's a gathering place. It's a friendly place. It's warm and inviting. My two sons both work there. My son Jesse is a manager and my other son Brian is a prep cook and my husband does all the paperwork and I do most of the production, managing and such.
