This is Ken's Artist in Bakery in Portland, Oregon. My name is Ken Forkisch. I'm the owner and founder and head baker. This is my bowl. It's a wicker basket for rising bread or what we call profe in the last stage of the rise. In German it would be called a Brotformen. Where I started using this is in my book which is called Flower, Water, Salt, Yeast. I published my 10 speed press. I made recipes for the home baker and all the breads they rise in these wicker baskets. All the breads that I developed and tested in my home kitchen for the book were, they are baked hundreds and hundreds of loaves in these baskets. So this is one of those. That's the history. More often than not, It looks bright, it's not. I We call this Country Blonde. This is my favorite bread. I wrote a note to this local bread in my book. I took a big loaf of my bread to the farmers fields where the farmers grow the wheat that turns into the flour that we bake with. I took a loaf of bread back to where it was born.
